Burrata, Peaches and Tomato

Ingredients
- 5 ripe tomatoes (heirloom or oxheart varieties recommended), sliced 
- 2 ripe yellow peaches, sliced 
- 1 large ball of burrata cheese 
- A few fresh basil leaves 
- 3 tablespoons of high-quality olive oil 
- 1 tablespoon of high-quality white wine vinegar 
- Salt, to taste 
- Freshly ground black pepper, to taste 
Method
Begin by washing your tomatoes and peaches. Gently pat them dry before slicing them into fairly thin slices.
On a large serving plate or platter, arrange the sliced tomatoes and peaches in an alternating pattern.
Carefully tear the burrata ball into chunks with your hands. Scatter these pieces over the top of the sliced peaches and tomatoes.Tuck a few fresh basil leaves among the slices of peach and tomato and over the burrata.
Drizzle the high-quality olive oil evenly over the salad, followed by the white wine vinegar. Finish the salad with a generous sprinkle of salt and freshly ground black pepper.
Notes
This dish is summer on a plate; I recommend waiting until the Peaches and Tomatoes are in season and extra sweet and juicy, as this dish is all about showcasing beautiful produce.
