Pimped Guacamole

Serves 6

Ingredients

  • 4 ripe avocados, diced

  • 200g cherry tomatoes, chopped

  • Juice of 1 lime (more if needed)

  • A handful of fresh coriander (Cilantro), chopped

  • 3 tablespoons sweet chili sauce

  • A drizzle of olive oil

  • Black sesame seeds, for garnish

    For the Pickled Onion:

  • 1/2 red onion, thinly sliced

  • Juice of 1 lemon

  • A pinch of salt

Method

In a small bowl, combine the thinly sliced red onion with the juice of 1 lemon and a pinch of salt. Mix well and let it sit for at least 15 minutes, or while you prepare the rest of the guacamole. This process will soften the onions and mellow their sharpness, adding a bright, tangy flavour to the guacamole.

In a large bowl, add the diced avocados, chopped cherry tomatoes, chopped coriander, and sweet chili sauce. The sweet chili sauce is not traditional in guacamole but adds a delicious sweet heat.

Drizzle with olive oil and add the lime juice. Season with salt to taste, and mix well to combine all the ingredients.

Once mixed, transfer the guacamole to a serving dish. Drain the pickled onions and scatter them over the top of the guacamole. Garnish with a sprinkle of black sesame seeds and a few more Coriander leaves.

Notes

This Guacamole is fantastic alone, with a few corn chips as an appetizer. However, when I'm feeling like a taco night, I love this Guacamole wrapped up with some slow-cooked beef in a taco!
